GROUND BEEF RECIPE

MOMMA'S MEAT LOAF

INGREDIENTS

1 large egg 
1/3 cup milk
1 tsp worcestershire sauce
1/2 cup plain breadcrumbs
1 tsp italian dressing 
1/2 tsp garlic powder
1 tsp salt 
1/4 tsp freshly cracked black pepper 
1/2 cup minced onion 
1.5 lbs. Gerard Family GROUND BEEF

Glaze

1/2 cup ketchup 
1 Tbsp brown sugar
1 Tbsp worcestershire sauce
Instructions
1.Preheat the oven to 350ºF. In a small bowl whisk together the egg, milk, and Worcestershire sauce. In a separate small bowl, stir together the breadcrumbs, Italian seasoning, garlic powder, salt, and pepper. Mince the onion. 2.Add the ground beef, egg mixture, breadcrumb mixture, and minced onion to a large bowl. Use your hands to mix the ingredients together until evenly combined. Avoid over mixing. 3.Place the meatloaf mixture on a rimmed baking dish and shape it into a loaf that is approximately 4-inches wide, 8-inches long, and 2-inches tall. OR use a muffin tin and make mini meatloaf cups like I did. 4.In a separate small bowl, stir together the glaze ingredients (ketchup, brown sugar, Worcestershire sauce, and mustard). Spread the glaze evenly over the top and sides of the meatloaf. 5.Bake the meatloaf for 50-55 minutes, or until the internal temperature reaches 165ºF. Allow the meatloaf to rest for 5-10 minutes after baking, then slice and serve. Muffin tin meatloaf only cooks for 15 minutes.

ROAST RECIPE

FAMOUS MISSISSIPPI ROAST

INGREDIENTS

  • 1 (3-4#) Gerard Family Beef CHUCK ROAST
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/4 cup butter
  • 4-5 peperoncini
INSTRUCTIONS: 1-Place roast in the slow cooker and sprinkle the top with the ranch dressing mix and the au jus mix. Place peppers on top of the mixes, and add the butter. 2-Cook over low heat for 8 hours. Serve with noodles, rice or mashed potatoes. Enjoy!

FAJITA RECIPE

SHEET PAN FAJITAS

INGREDIENTS

  • 1 pound Gerard Family Beef FAJITA MEAT
  • 1 large onion thinly sliced
  • 3 bell peppers thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning
  • 1 lime cut into wedges
INSTRUCTIONS
1-Preheat oven to 400°F and line a baking sheet with aluminum foil. 2-Place the steak in the middle of the pan with the onions on one side and the peppers on the other side. Drizzle the olive oil all over and season with the taco seasoning. Use your hands to toss the steak and vegetables with the oil and seasoning until evenly coated. Place the lime wedges on the pan. 3-Cook until the vegetables soften and the steak is browned on the outside, about 10-12 minutes depending on desired doneness. 4-Squeeze the cooked lime wedges over the steak and vegetables. Serve immediately with warmed tortillas, salsa or desired toppings.
